Whenever we’re planning a day outing, I always like to pack something for lunch so we’re not tempted by the unhealthy, expensive options that entice us with their smells. However, I haven’t had much luck with feeding pre-made sandwiches to the girls. So instead, I bake our favourite healthy muffin recipe into ice-cream cones and pack those with some fruit.

The batter takes me about twenty minutes to mix up (which includes ten minutes of wait-time — the perfect excuse to catch up on some emails!).

You can add icing and decorations if you want to make your healthy muffins more tempting (or impressive). I usually just keep them plain.
