Favourite food-to-go

Whenever we’re planning a day outing, I always like to pack something for lunch so we’re not tempted by the unhealthy, expensive options that entice us with their smells. However, I haven’t had much luck with feeding pre-made sandwiches to the girls. So instead, I bake our favourite healthy muffin recipe into ice-cream cones and pack those with some fruit.
The batter takes me about twenty minutes to mix up (which includes ten minutes of wait-time — the perfect excuse to catch up on some emails!).

The ingredients include bananas, oats and blueberries.

I spoon the mixture into ice-cream cones prior to baking.

After they're baked, they still retain their shape.

You can add icing and decorations if you want to make your healthy muffins more tempting (or impressive). I usually just keep them plain.

Serve and share.
We’ve got another outing planned for tomorrow, so I made a double-batch of these ice-cream cone cupcakes today. The girls think of them as a treat, and only I know exactly how healthy they are!
