Oatmeal cupcakes, June 2009
Perfect child food: healthy porridge disguised as a cupcake.

I’m a fan of porridge (oatmeal). I like it a lot. Occasionally I make it for the girls, but they prefer cold cereal. However, for this week’s Baking Day I found a winner (taken from the Wild Boar on the Kitchen Floor cookbook by Harriet Hill & Friends):

OATMEAL MUFFINS

Mix:
1 c flour
1/4 c sugar
1 T baking powder
1/2 tsp salt
1 c oats
1/2 sultanas/raisins

Add:
3 T oil
1 egg, beaten
1 c milk

Sprinkle with sugar & cinnamon, if desired. Bake in a moderate oven.

Easy, delicious and healthy. It’s a winner!
